I found a great new cookie recipe! I thought I'd share (or preserve for prosperity, since I lose stuff like a pro).
Cocoa Cookies
1/2 cup butter (or margarine)
1 cup brown sugar, packed
1/2 cup cocoa powder
1 large egg
2/3 cup milk
1 1/2 cup flour
3 teaspoon baking powder
1 teaspoon vanilla
- Preheat oven at 400 F.
- Cream butter and brown sugar. Add egg and mix together.
- Sift dry ingredients and add to first mixture alternatively with milk.
- Add vanilla (I forgot to do this but it still tasted yummy)
- Drop spoonfuls to ungreased cookie sheet.
- Bake 8-12 minutes. (I did 10 minutes)
- Let cool on a wire rack.
- Yields about 40 medium-small cookies
I'll add a picture tomorrow. They turned out really soft and chocolatey, but not too sweet. They go great with coffee or tea. In fact, I may try adding some instant coffee to it next time to make them Cocoa Mocha Cookies (Mococoa Cookies?). It also made a lot of cookies. Not sure how long they keep for, since I took them to school to be engulfed by other grad students. :D
